From Palate to Pairing - A 6-Week Advanced Course in Wine

  • Stretch and Fold 71 Papaverhof Amsterdam, NH, 1032 KJ Netherlands (map)

After the overwhelming success of our introductory wine tastings, I’m thrilled to invite you to take your wine journey one step further with our brand new 6-week advanced course — designed for those who want to move beyond the basics and truly deepen their appreciation and understanding of wine.

Drawing on over seven years of experience as a sommelier — working in wine bars and restaurants such as Binnenvisser, Hemel en Aarde and Choux, as a wine importer and teaching several courses — I will guide you through an in-depth exploration of wine that combines professional insight with an open, interactive approach.

Each 2.5-hour session is an invitation to explore the complexity and nuance behind every bottle. We’ll go beyond the fundamentals of tasting and venture into advanced techniques: identifying structure, balance, and age-worthiness; uncovering the profound influence of terroir; and expanding our knowledge of grape varieties, winemaking styles, and regional traditions, both classic and emerging.

What makes this course unique is its flexibility. The exact curriculum will evolve according to the group’s interests: whether you’re curious about Burgundy, natural winemaking, sparkling wines, or unconventional food pairings, we’ll tailor each week’s focus to your curiosity and palate. To support your learning, each participant will also receive a detailed booklet for keeping track of tastings, insights, and notes — a resource to carry with you long after the course ends.

Expect rich tastings, lively discussions, and a relaxed yet engaging atmosphere where your questions and discoveries help shape the experience. This course is the perfect next step for anyone who has joined our introductory tastings or already has a basic understanding of wine and wants to expand their knowledge in a meaningful way.

Join us for this new series and raise your wine game to the next level!

The workshops will be led by Emma Scheffer.
